I am not sure about the meaning of the "off-track" you are referring to.
As i know, if we say keep tracking on something which means keep an eye on something.
"off", this word usually we can interpret as without, not, away...etc.
"track", this word has multiple meanings such as foot-print, routine...etc
So, i will interpret "off-track" as losing the contact of something, out of control, or going into the wrong routine.
And this is the meaning i found on wikipedia:
